The word combines Japanese teppan ('iron plate') and yaki ('grilled'). Teppanyaki meals are often theatrical — chefs flip food, create flame bursts, and perform tricks at the table. In North America the cooking style is sometimes incorrectly called 'hibachi,' which actually refers to a small open-grate grill.
